Hatch Chile Crustless Quiche

Ingredients:

1 pound bulk sausage

1 cup shredded Cheddar cheese

1 cup shredded Swiss cheese

1/2 cup chopped green onion

8 eggs

2/3 cup instant potato flakes

1/2 cup heavy whipping cream

1 cup Hatch green chile (drained really well)

1 teaspoon pepper

2 teaspoons salt

Green Chile Sausage Wontons

INGREDIENTS

1 (16 oz) package wonton wrappers

1 lb sausage, browned & drained

1 cup shredded Monterey Jack cheese

1 cup shredded Cheddar cheese

1 cup, ranch dressing

1 cup chopped hatch green chilies (drained really well)

Hatch green chile soup with Fried Potatoes

SOUP
3 cups of Hatch Green Chile-chopped and sautéed
(I like my chopped in the food processor very finely)
1 cup of flour for a thickener
12 cups of water
4 T of chicken bouillon(You can substitute chicken broth for the water and bouillon)

8 tbsp butter or oleo
1 medium yellow sweet onion, chopped (fine)
1/2 c. flour
salt and white pepper to taste
4 cups of roasted chopped hatch green chile
