1 pound bulk sausage

1 cup shredded Cheddar cheese

1 cup shredded Swiss cheese

1/2 cup chopped green onion

8 eggs

2/3 cup instant potato flakes

1/2 cup heavy whipping cream

1 cup Hatch green chile (drained really well)

1 teaspoon pepper

2 teaspoons salt



  1. Preheat oven to 325 F. Spray mini muffin cups with cooking spray
  2. Heat large skillet over medium-high heat and cook and crumble sausage. Drain any excess grease. Let cool
  3. While sausage is cooling beat eggs. Add in potato flakes, cream, cheese, green onions, green chile, and salt and pepper.
  4. Add sausage into egg mixture.
  5. Scoop mixture into the muffin tins.
  6. Bake in preheated oven until quiches are set in the middle-about 22 minutes.
