Hatch Green Chile Ice Cream: Beat The Heat
For some, the months of August and September signal the end of summer and the beginning of fall. For all of us here at the New Mexico Green Chile Company, however, the fun is just getting started.
The days aren’t cooling down quite yet, and Hatch chile season is in full swing. This means our favorite chile will be populating our grocery stores and our refrigerators, just waiting for you to use them in your favorite recipes.
To celebrate these chiles and the last few weeks of summer, we think it’s time for some ice cream. Yes, that’s right, Hatch green chile ice cream!
“Sweet heat” is a flavor combination that has gained popularity over the years, and for a good reason. There’s just something about kicking up your favorite sweet treats with a little bit of spice. This ice cream recipe is the perfect example of “sweet heat” that will wow your guests and delight your taste buds.
1 cup Heavy Cream
2 cups Whole Milk
3/4 cup Granulated Sugar (divided: ½ cup and ¼ cup)
2 Vanilla Beans (split lengthwise — use both the pod and the seeds)
8 Roasted Hatch Green Chiles (peeled, seeded*, and diced; divide in half)
4 Egg Yolks
1/2 teaspoon Pure Vanilla Extract
In a saucepan, add the milk, cream, 1/2 cup of sugar, vanilla bean, and half the Hatch Chiles. Scald the mixture (bringing it nearly to a boil), stirring constantly. In a separate bowl, whip the egg yolks with the remaining sugar until reaching a smooth, ribbon-like consistency. Pour part of the scalded mixture into the egg and mix thoroughly.
Return the mixture to the scalded ingredients in the saucepan. Cook the combined liquids over low heat until thick; you want a consistency thick enough to coat the back of a spoon. Strain this mixture into a bowl and, finally, add the pure vanilla extract. (We recommend using the 100% pure vanilla extract rather than the imitation option.)
Cool the mixture in your refrigerator until completely chilled. Once it has reached the proper temperature, you’ll pour the mixture into your ice cream maker. Be sure to follow the manufacturer’s directions to successfully churn and chill the ingredients. Halfway through the freezing process, generally around 10 minutes in, add the remaining finely diced Green Chile. Let the ice cream machine finish its job, and enjoy!
** If you like your ice cream hot, leave in the seeds for even more heat!
