3 pounds of small cubed pork roast
3 pounds of potatoes cubed
3 Cups of roasted and chopped green chile
2 quarts of boiling water
1 onion diced
Cumin
Salt
Granulated Garlic

Combine the water, onion and the fire roasted green chile and bring to a boil. Add salt and garlic to taste and a dash or two of cumin. We like to use lots of salt and garlic!

Dust the diced pork in flour and brown in a hot skillet. Once all the pork is browned add to the simmering pot with water. Simmer for about 30-60 minutes until pork is nice and tender. Once the pork is fully cooked and tender add the diced potatoes and continue to simmer until potatoes are soft. Once the stew complete you can thicken the sauce with 1/2 cup of flour mixed with some hot water. Serve with warm tortillas and Enjoy!
