2 lb bag of pinto beans
1 lb bacon/salt pork
2 cups of Hatch Green Chile
Salt/Pepper to taste
Combine beans, bacon/salt pork, Hatch green chile, and salt and pepper into a big pot. Cover the mixture with water and bring to a boil. Once the beans begin to boil turn the temperature down to low and let simmer until the beans are soft.
*When serving the Hatch green chile beans I like mix in monetary jack cheese and some more green chile on top for an extra kick!
